back to basics ~ tofu scramble

Sometimes it is nice just to get back to the basics, not every meal needs to be extravagant or take hours to make.  Today I am sharing with you a very basic tofu scramble recipe that is a staple recipe in our house. From this recipe you can get as creative as you want- throw in some salsa, shredded swiss char, baby spinach or just serve it up as is. This is also the base of my homemade breakfast burritos - tofu scramble, dice red potatoes, diced up vegan bacon and vegan cheddar cheese. I wrap these up in a large flour tortilla, then in foil and allow them to cool prior to serving.

Tofu is the perfect vehicle to impart many different flavors and seasonings of your choosing. Here we combine Black Salt, Turmeric and Nutritional Yeast to create the perfect “eggy” substitute for a lazy weekend breakfast.

Turmeric Tofu Scramble
Serves 4
You will need:

14oz Extra firm or firm tofu (use sprouted tofu for a denser scramble), drained
½ tsp Black Salt/ Sulfur Salt
1 tsp ground turmeric
4 tsp of nutritional yeast flakes
1 tsp chopped freshly parsley


 Crumble tofu with your hands into medium sized crumbles so it resembles cooked scrambled eggs into a large frying pan
Over medium heat add to the tofu  black salt, turmeric, nutritional yeast and mix well
Cook for 3-4 minutes stirring occasionally to ensure even cooking
Transfer to a plate and garnish with fresh parsley
