farmers market soup

My Mom and I dropped in to our local Thursday Market and veggies were aplenty along with fresh ciabatta bread and vegan cashew ice cream from Rock Salt Creamery; sooooo freakin' good.

 I absolutely adore this time of year (although Fall still has my heart) - aside from growing my own veggies which just didn't happen this year, local markets are the next best thing. This past Saturday was rainy and cold, but I was up and figured I would pop down to our Saturday Market to see who braved the weather, I wasn't dissapointed and came home with another overflowing bag of early summer goodness.

Swiss Chard is one of my favorite Summer Veggies, I love the bight lights variety- the color is absolutely gorgeous. Heirloom striped zucchini + peppers along with green onions and wax beans were all calling to come home with me.

Speaking of veggies calling to come home with me, has anyone seen the trailer to Sausage Party? OMG hilarious, if you haven't you must watch.

I have a new favorite pasta - it is so yum. The Quinoa Macaroni and Pasta from livingNOW is so good. It is hands down the best gluten free pasta I have tried to date. There is no weird taste or texture, it is simply perfect and I use it in everything // mac n' cheese, pasta salads, soup. Well that isn't really everything, but I use it every chance that I get.

Like I mentioned before, the weather on Saturday was cold and rainy. On any rainy day, summer or not I always get the most intense craving for Soup + Grilled Cheese- anyone else with me on this?

I mean there is no official rule book saying soup is a no no during the summer right? Especially a soup that is loaded with Market veggies. I hope I didn't mess with the etiquette of soup.

Aside from the copious amounts of veggies, a healthy dose of nutritional yeast, all purpose seasoning, garlic and tomato paste make up the broth - easy peasey.

I always load on an extra spoonful of nooch once the soup is in the bowl just before enjoying.

Farmers Market Soup

serves 4

you will need:

drizzle of olive oil or coconut oil

1 small white onion - diced

1 small red pepper - chopped

1 medium zucchini- slice into half rounds

1 large garlic clove - minced

1 tsp all purpose seasoning

salt to taste

Handful of yellow wax or green beans - trimmed and snapped into bite size pieces

1 can // 2 cups of white beans - drained + rinsed

6 cups water

1/3 cup nutritional yeast (I prefer the fine powder vs. flakes)

2 tbsp tomato paste

1 cup (dry measure)  livingNOW quinoa elbows

handful Swiss chard stems + leaves - chopped + sliced

to finish

Additional nooch, swiss chard stems or leave or green onions

assembly:

In a large soup pot add oil over medium high heat. Once heated, add onion, red pepper + zucchini - season with salt and saute until onion is translucent - about 3-5 minutes. 

Add garlic and all purpose seasoning to the pot and saute another 30-60 seconds.

Add  trimmed yellow or green beans, white beans, water, nutritional yeast + tomato paste- stir and bring to a boil. Add Quinoa elbows and reduce to a simmer - simmer for 8 minutes.

Add Swiss chard and cook an additional 3 minutes.

Season with sea salt as you go to taste.

Ladle into bowls and top with additional nooch, swiss chard or green onions.
