one pot lemony garlic pasta // nooch + veggies
This dinner is so easy, it has been our go to dinner at least once a week on nights we have no inspiration to make anything else. It is the perfect dinner to use up an abundance of veggies staring back at you in the fridge or a great way to put your first CSA box to use. The easiest clean up too - one pan and your are done!

Use any mix of veggies you have on hand - any color pepper, shallots or onions, take your pick in mushrooms or leave them out! The only must is the lemon, you cannot forget the lemon.

I have not made this meal with Gluten Free pasta, not sure how it would turn out- this dish relies on the starch from the pasta to thicken the sauce, but if you are feeling adventurous it would be worth a shot with gluten free pasta.

Lemony Garlic Pasta // Nooch + Veggies
serves 4

you will need:
drizzle of olive oil
1 small zucchini cut in half lengthwise then sliced into half rounds
1 yellow bell pepper sliced
2 portabella mushrooms sliced 
1 shallot sliced
1 tsp all purpose seasoning mix
salt to taste
1 small head of broccoli cut into florets
2 large garlic cloves minced
1/2 box spaghetti broken in half
1/3 - 1/2 cup nooch (nutritional yeast) plus more for sprinkling
3 1/2 - 4 cups water
juice of 1/2 lemon (or whole lemon for extra lemon)
2 tbsp vegan butter (optional)
2 cups sliced Cherry tomatoes

assembly:

Heat a large skillet with sides over medium high heat - drizzle olive oil into the pan. Add zucchini,  peppers, mushrooms and shallots to the pan, season with salt + all purpose seasoning  and saute until veggies begin to show some color / caramelization.  Add in broccoli and garlic and saute a few minutes.

Push veggies to the sides of the pan creating a  well in the center, place your spaghetti in this opening in the pan that you've created. Sprinkle nutritional yeast over the veggies and pasta, add water and juice of the lemon. You will want to stir the mixture around a bit to mix everything up. Bring to a boil and simmer 8-10 minutes  or until pasta is aldente and sauce begins to thicken. Add in butter for a creamier sauce or leave out. Turn off heat and add cherry tomatoes - stir around and allow to sit for 2-3 minutes for cherry tomatoes to heat through a bit and sauce to thicken up even more.

Sauce thickens the longer it sits, don't panic if you think the sauce looks a bit loosey goosey, it will thicken.

Divide into 4 bowls and sprinkle with additional nutritional yeast for extra cheesy flavor. The more nooch the better ;)
