loaded hash brown waffles // Mastro Co.

Weekend breakfasts are the best.  When we are not having pancakes we are most definitely having breakfast sandwiches. Alongside our breakfast sandwiches we always have some form of breakfast potato. Justin loves to tell me about how his Mom would always use their waffle maker for sandwiches and pie pockets - then he proceeds to ask me why I don't use my waffle iron for more than just waffles- that got me thinking. Justin loves shredded potato hash browns and I am more of a home-fry girl with peppers and onions, this is the perfect combination of the two. And the perfect way to put my waffle iron to use for more than just waffles.

The  cutting board and knife are the 2 most used + loved tools in my Kitchen, I would think that is the case for most of us. I have never invested in a really well made cutting board, I had always admired them from afar but never got the courage to purchase one- I was always a little jealous when I would go to a friends house and they had a well loved hand created cutting board.....

The cutting board I received is absolutely beautiful, the craftsmanship is top notch.  The boards are made in Northern Michigan using black walnut and maple inserts. They are more expensive to produce but will keep your knives sharper, last longer and look better over time. 

Thick enough to last but light enough to move around with an easy to grab handle on each end.

Shredded potato, red pepper, green onions and red onions are combined with a spicy mix of fresh pepper, sea salt and smoked paprika. From here you can also add in vegan cheese or make half plain and half with cheese. We loved both variations.

The beauty of these hash brown waffles- you can make enough to feed a crowd in no time at all.  Scoop the mixture into each waffle iron, close the lid and let the waffle maker work its magic. Once done, I transferred the hash brown waffles to a sheet pan and kept them warm in the oven (set at 170) until the rest of breakfast was complete. In between hash brown making I was able to make the breakfast sandwiches.

Perfect for brunch with the family or a lazy weekend breakfast. 

I took mine the more traditional way, but you could totally go all out with your toppings. Justin opted for vegan sour cream. For a late night party snack I would totally top these with vegan bacon bits, sour cream and salsa.

Loaded Hash Brown Waffles
makes 6 waffle hash browns

you will need:
2 medium potatoes shredded

1/2 cup red pepper diced

1/4 cup small red onion diced

1/4 cup green onions / sliced

1/2 cup vegan shredded cheese

salt + pepper to taste

1 tsp smoked paprika

coconut oil spray or other cooking spray (canola, olive oil)

optional toppings // vegan sour cream, bacon bits, green onions, salsa, ketchup

assembly:
 Combine shredded potatoes, diced red pepper, green + red onions, shredded vegan cheese (if using) and all seasonings in a medium bowl, using your fingers toss / mix to combine.

In a pre heated waffle iron well greased, add a 1/2 cup potato mixture to each waffle "well" (this may vary depending on your waffle iron- adjust according to your waffle maker). Close the cover and cook about 5 minutes // my iron maker has an automated light // turning from red to green when done.

Carefully lift each cooked hash brown waffle from the waffle well and transfer to a sheet pan. Keep warm in a 170 degree oven.

Repeat (re-greasing wells each time) until all potato mixture is used. You should have 6 Hash Brown Waffles.

Serve with your toppings of choice.
