One look at my instagram feed and it is totally obvious that I am a fan of breakfast. 
Breakfast is just so much fun! Everything from smoothies to tofu scrambles, pancakes and cinnamon rolls always have a place on my breakfast table.

During the winter months I crave a warm hearty breakfast. Oatmeal is one of my many go to winter breakfasts. 

A warm, filling and easy way to start the day on a good note.

The addition of Chia Seeds makes this oatmeal even more special, cacao nibs are good in just about everything and the coconut is just an extra special bonus.

The beauty in this combination of ingredients is that it can easily be transformed into overnight oats - toss all ingredients in a lidded bowl the night before and on the morning of add a splash of milk and head out the door. I might even add a tablespoon of almond butter to the mix!

I talk about and use NH Pure Maple Syrup quite often on the blog and in my Recipes. I realize that the majority of my readers a) do not live in NH  and b) may not have immediate access to Pure Maple Syrup. I prefer to use Grade B Maple Syrup which can be really hard to come by in a normal grocery store.  NOW carries an amazing Maple Syrup that is ORGANIC and available in Grade B.

1lb Package of Date Sugar
32oz Grade B Organic Maple Syrup
10oz Package Organic Unsweetened Shredded Coconut

serves 1

you will need:
1/2 cup Rolled Oats 
 1 1/2 cups Almond Milk  
1 tbsp chia seeds + more for topping if desired 
1 tbsp Organic Shredded Coconut + more for topping

Drizzle of pure maple syrup // grade B is best
1 tbsp Cacao nibs
1 tbsp chopped Almonds

assembly:
Place oats, almond milk, date sugar, chia seeds and shredded coconut in a small sauce pan. Bring to a boil, reduce heat to low and simmer for 2-3 minutes stirring frequently until oatmeal begins to thicken.

Remove from heat and pour into a bowl.

Top with cacao nibs, chopped almonds, shredded coconut and chia seeds.
Drizzle with pure maple syrup just before serving.

Enjoy!

  9. I love having oatmeal for breakfast, too! I've actually been using coconut palm sugar in my oatmeal lately (or some local Grade B maple syrup -- SO GLAD to hear of someone else using real maple syrup for once!!) but that date sugar is super intriguing! I love using dates as sweeteners when I'm baking, but it would be super handy to have them in a dry, measurable form instead of soaking a bunch of dates and then having to blend them up before I can use them. Will have to keep my eye out and see if they have this in stores around here!
