Cookies are one of the best parts of the Holiday Season. Each year I bake up around 6 different Christmas Treats for my cookie boxes that are delivered to friends and family. I try not to repeat any cookies from the last Christmas cookie box so coming up with new cookies every year has been a personal challenge + a pretty tasty one at that too.
These cookies are a definite winner- they are super easy to make, taste incredible and you make a decent amount in one batch.
Think of these as a cross between a snicker doodle and a white chocolate macadamia nut cookie, it is a bit of a cookie hybrid that even got my chocolate loving boyfriend reaching for thirds.
Seriously, the first thing he asked was 'where's the chocolate?" ; he is a bit of a chocolate chip cookie addict.
Vegan white chocolate chips can be found on Amazon, I like to buy them in a bundle of three as they store really well. I also use them in my White Chocolate Peppermint Rounds which were a big hit with my Sister!
This Holiday Season I am so far behind on anything to do with Christmas // we do have our tree up, albeit we went with a Norfolk Pine and one string of lights + a wooden tree topper, our homemade advent calendar is in full swing and we are minimally decorated around the house....however when it comes to the gift department I am 2 for 10. I am having a really hard time trying to shop for everyone, pretty sure at this point everyone is getting booze for Christmas.
That is acceptable right?
The final cookie list has been created, along with a menu for Christmas morning + dinner. We have a pretty low key Christmas Day planned, which is what we prefer. My Mom and Sis will be bringing their new Beaus over to celebrate the first Christmas in our new House which is something we are looking forward to.

White Chocolate + Cinnamon Macadamia Cookies
makes 24 cookies
you will need:
for the dry
1 1/2 cups flour
1 tsp baking soda
1 tsp cinnamon
1/8 tsp salt
for the wet
5 tbsp vegan butter // room temp
1 cup granulated sugar
1 vegan egg // flax egg, chickpea brine, chia egg
1 tsp pure vanilla extract
1 cup vegan white chocolate chips
1/2 cup macadamia nuts // roughly chopped
pre heat oven to 350* f
Sift together dry ingredients into a medium bowl
In the bowl of a stand mixer or another large bowl if mixing by hand - cream together vegan butter and sugar until fluffy. add vegan egg + vanilla extract - mix for an additional 30 seconds.
Add dry mix to stand mixer - mix until dry is well incorporated into the wet, about 30 seconds.
Mix in white chocolate chips + nuts
Line 2 rimmed baking sheets with parchment paper - a tablespoon at a time drop rounds of dough onto each sheet (12 rounds to a large sheet). Bake in a 350* f pre heated oven for 13-15 minutes (13 minutes for a softer cookie + 15 minutes for a crunchier cookie) . Alternating cookie sheets halfway through baking time.
Remove cookies from oven and allow to cool for 1-2 minutes on the baking sheet. Transfer cookies to a wire cooling rack to finish cooling.
