I never tire of breakfast, it is the one meal that I get totally excited over. I love the ritual of our lazy Sunday morning breakfast, the predictability of breakfast during the work week + the quietness of Saturday mornings with just the pup, kitty + a crossword with a bottomless pot of tea.
Saturday is also the day of branching out; a new oatmeal, vegan eggs bene or whatever was found at the Farmer's market that morning.
If you have been around for a while you know my love of all things peanut butter + banana - throw in some chocolate and you have perfection!
Oatmeal is one of those amazing breakfast's that stays with you for a good part of the day- clean healthy eating.
Peanut Butter adds a little extra boost and cinnamon, well cinnamon is just a rock-star- it is the one spice I don't think I could live without, that and salt.
This breakfast is an amazing way to begin your day, it just feels so good making and enjoying.
It really is quite simple and comes together pretty painlessly.
Seriously. Make this when you find yourself with an extra 10 minutes to spare- trust me, you will thank me.

Peanut Butter Banana Oatmeal
you will need:
1 1/4 cups almond milk
1/2 cup old fashioned oats
1 banana sliced // divided
2 tbsp peanut butter // Dark Chocolate Dreams was used in this recipe, pick your fave!
1/2 tsp ground cinnamon
Drizzle maple syrup
Super seed blend; flax, hemp, chia
In a medium sauce pan // dutch oven//pot bring almond milk to a boil, add oats, 1/2 of the sliced banana, peanut butter + cinnamon - reduce heat to low, cover and simmer for 5-7 minutes, until mixture begins to thicken. Watch for boil overs, reduce cooking temp as needed.
Remove from heat + transfer to a bowl. Top with remaining sliced banana, seeds, cacao nibs + maple syrup.
