

Justin likes his slaw pretty straight forward- a bit of acid, a hit of sweetness, cabbage and carrots is all he needs. It is not often that I can sneak in a bonus ingredient, so I knew it could go either way- good or not so good when he found sriracha in the slaw. Let's just say it was well received, considering I found him the next day scooping up the leftover slaw with tortilla chips.....
At first glance the sesame seeds don't make much sense, but trust me on this, they add a bit of nuttiness that is pretty awesome. Plus, if you can get a hold of black sesames you either think they make the final slaw gorgeous or like your slaw got invaded by little sugar ants.
If you are looking for a super creamy slaw adjust the vegan mayo according to your taste. This recipe makes a boatload- perfect for a BBQ, picnic or leftovers for a sandwich or taco topper!
Napa Siracha Slaw
makes 6 servings
you will need:
1/2 head Napa cabbage, shredded (about 4 cups)
3 large carrots, shredded (about 2 cups)
3 tbsp vegan mayo
2 tbsp liquid sweetener (honey, agave or pure maple syrup)
1 tbsp apple cider vinegar
2-4 tsp sriracha or to your taste
2 tsp sesame seeds
Kosher salt to taste
assembly:
In a large mixing bowl whisk together vegan mayo, sweetener, apple cider vinegar & sriracha. Add shredded cabbage and carrots and toss until shredded veggies are well coated, Season with salt and sesame seeds and toss well- add additional sesame seeds to top of slaw prior to serving if desired.
Chill for a few hours prior to serving or serve right away.
Enjoy!
I never would have thought to add sriracha to coleslaw, but it sounds so delicious! And I'm in the same boat -- I haven't touched the garden yet, and we had a few inches of snow (!) just last week. When I heard it was going to snow, I thought "oh, that's not too unusual, it will just be a few flakes that won't even stick..." but we had INCHES. Today, on the other hand, is supposed to get into the mid seventies. Crazy! Fingers crossed the cold is gone for good, now, and I can get to work out in the yard. I'm really excited to try my hand at a bigger garden this year. Yours always inspires me to do more than I think I can!

This past weekend I finally got it into gear and cleared out the garden and all the fall debris (5 42 gallon bags later!!!), the seedlings are planted and tomorrow I'll be planting the first round of seeds and putting together a new pea trellis. DeleteI made this last week and it was delicious. But... it was SO watery. Is that how napa cabbage usually is? I have never used napa before, just regular old cabbage.
ReplyDeleteThank you for your comment Jennifer- regarding the Napa Cabbage, I am not aware that it has a higher water content than other cabbages- there was a little moisture when the slaw was kept in the fridge overnight by by no means watery, perhaps the cabbage you had a bit extra moisture and was extra fresh?

ReplyDeleteThis doesn't look like napa cabbage. Napa is taller, not round. This looks like savoy? Of course there are probably varieties out there that I don't know ! Great looking recipe though, will try it tonight with BBQ duck and goose wings!
