These adorable mini tacos have been my go to summer appetizer; I can recall at least 5 gatherings this summer where they have made their appearance. Way cute, simple to make & easy to eat; totally meeting all the requirements for the perfect party food. I really cannot get enough of these mini tacos, not only because they are mini, but I also have a thing for tacos- they are my second love.

I brought these to my Gram's 75th Birthday Party-  the youngest to the oldest and everyone in between loved these little bites. Do you ever find yourself in a complete panic when the dish you bring starts to dwindle down before you have even had a chance to partake? Justin knows the look all too well, normally I'm the one in the middle of a conversation; once he catches the look he knows he is on a food mission.

This is a great recipe to make with little helpers in the kitchen - put them to work cutting out the mini tortillas with a cookie cutter while you prep the veggies and tempeh. They can easily help with the assembly too! I absolutely love cooking with my nephews, cooking with the littles' creates tradition and broadens their foodie palates and knowledge.

Mini BBQ Tempeh Tacos
Makes 12 mini tempeh Tacos  + extra filling

you will need: 
(12) mini rounds cut from 3 flour tortillas with a 3" biscuit or cookie cutter
1 Package of tempeh
1/2 cup BBQ sauce + 1/4 cup water
Handful (about 1 cup) micro greens
1 medium tomato, sliced into thin wedges
1 ear of corn, kernels cut from cob

optional: serve with guac & salsa

assembly:
Cut your small tortilla rounds from the large tortillas - set aside.

Crumble your tempeh into a medium fry pan/skillet - add BBQ Sauce and Water, bring mixture to a boil. Cover and simmer for 5 minutes.

While Tempeh is cooking, prep the veggies for the mini tacos.

Uncover the tempeh and continue to cook for an additional minute or until sauce begins to thicken.Remove from stove top.

To assemble the tacos, spoon about a teaspoon and a half into each mini tortilla round, top with greens, tomato & corn. Secure 2 completed tacos with a small skewer or tooth pick slid straight through the tops of the finished tacos. Repeat until all tacos are made.

  2. oh my gosh.. these are the cutest things.. i can imagine that look. it has happened to me too.. like hubbs telling me to get to the table before my dish and other vegan options are all over. :)
    and congratulations on all the pictures on vegnews. love the sticky pudding picture. if only i could grab it out of the page!

    1. Ha the same look, I know it well! I had so much fun shooting the pudding and pie for their most recent issue, the sticky puddings were really yummy too :0

  11. I've never thought of making tacos as an appetizer for a party or potluck because they seem like something that would be difficult to assemble or serve, but these mini tacos look so cute and easy to eat! Love the idea of adding corn too
