What screams "summer's coming!" more than rhubarb & strawberries? They are one of the first sweet fruits and veggies of late spring to make an appearance at the farmers markets, for me Rhubarb & Strawberries mark the start of summer baking & cooking - or should I say non cooking, the oven doesn't see much action in our house during the warm new England summer months. However in late spring/early summer there are days when there is the slightest chill in the air, on those late spring days when Mother Nature cannot make up her mind whether she wants to leave winter behind, you can justify turning the oven on.
Those are the days when you should be making these simple little cakes.

I just made a big batch of strawberry rhubarb popsicles. Out of this world. I never thought of adding a little tarragon!

ReplyDeleteThese are beautiful! I've always been afraid of rhubarb...not sure why as they seem to go well with strawberries which I love. Who doesn't?
ReplyDeleteI don't think I've ever had rhubarb... and you say it's sweet? I always thought it was really sour for some reason and could never understand why people were eating it, haha

Ooh, I totally agree, strawberry and rhubarb are my favorite flavors because they spell the beginning of summer to me. I never thought to put tarragon with them! Yum!

ReplyDeleteI always get excited when rhubarb season arrives...I love anything strawberry-rhubarb, but I don't think I've ever tried adding an herb to the mix...a tarragon syrup sounds like the perfect accompaniment to the sweet fruity cakes!
