maple chipotle sweet potato burger

life has been crazy busy lately. these are days when all i want to do is crash on the couch and not think about dinner, dishes or chores. when life gets hectic i run straight to the freezer hoping to find some semblance of a healthy dinner - typically you will find carefully tucked away leftovers or stock piles of pesto in my freezer.

this past week i was lucky - i could say that i was totally planning ahead by whipping up a batch of these tasty veggie burgers for the upcoming week. but, the reality was it was a burger experiment that just happened to taste fantastic and freeze well. this is also a burger that Justin wouldn't touch with a 10 foot pole - pay no attention to him, he is weird. so that left me with 4 burgers all to myself - which ended up being a quick and east lunch/dinner for me a few days last week.

my dish to share - strawberry rhubarb coconut crumb bars.
to me, nothing says spring more than rhubarb and strawberry. my aunt Nancy has a rhubarb patch in her little garden that she glady shares. this time of year fresh rhubarb makes a welcome appearance on our family table, typically in pie form thanks to my aunt Nance. however this year i wanted something a little different - enter the strawberry rhubarb coconut crumb bar, vegan and gluten free. does life get any better? only when you share these with your friends and family.

moms. they're the best.
they deserve breakfast in bed, freshly picked flowers and lots of love every day of the year.
one day out of the year they deserve an extra special breakfast, flowers they can plant that reminds them of each mothers day gone by, a day that we get to tell them how much we love them the remaining 364 days of the year.

my mom, there is no one remotely like her - she is amazing, one of  kind.
and I was lucky enough to spend mother's day morning eating mini quiche and chatting over cups of tea with her and Justin - although we did most of the chatting, Justin sat quietly by looking cute.

well hello sunshine, so glad you could join us for tea. why don't you pull up a chair and stay awhile.
the sun did indeed decide to stay awhile, like throughout the entire photo shoot - it certainly was a welcome guest, i just wished i remembered my filter during instead of after the fact - so please excuse the lighting in the photos - there's a little extra character called sunshine in these shots.
with our tea we enjoyed this tasty little tea bread with chocolate and cinnamon.

fiddleheads, one of the many signs new englanders look for, signaling spring is officially here and summer's on its way.  a fiddlehead, for those of you who have no idea what i am referring too, is a unfurled baby ostrich fern. when soaked, and lightly cooked they are amazing and the time to enjoy fiddleheads, sadly only lasts a few short weeks.

making granola is one of the easiest and tastiest things i love to make.
there are a million ways to make your own unique granola - i love adding different textures to my granola. once in a while all those little odds and ends you have sitting in your pantry by way of nuts, dried fruits and sweeteners typically gets made into a big batch of delicous granola that lasts a couple of weeks.

adventures in the dmv

weekend getaways- aren't they great?
a weekend trip with your cousin to the DMV to visit the greatest person ever; that person, the greatest one ever? that would be my little sister, made this trip even better than great - it was the greatest. our trip was full of amazing food, beautiful hikes, museums and monuments.
this was Sam's  first trip to DC - one weekend trip to the dmv certainly doesn't give one enough time to fully discover all the amazing things the dmv has to offer - my 7th trip down and i still haven't done everything there is to do!
