bourbon brown sugar cupcakes

i have the best parents

this week my dad came over on his own time to help justin finish up the final mudding, taping and sanding of the new Sheetrock in the mudroom. justin loathes this part of the project

my dad came to the rescue - he is simply the best
now we can move onto the finish work; you see, this has been an on going project for the past year
my dad knows how badly i wanted this project completed and knows how little extra time justin has on the one day a week he has off
my dad definitely deserves a super hero cape and these cupcakes

as some of you may know i bake cupcakes for those that i love- i wrote about it in one of my very first blog posts back in january of 2011- smbp was just a baby back then

so as a thank you to my dad i made these cupcakes for him
of course, made with an extra handful of love

the cupcakes are baked until golden - you know the drill
then slathered brown sugar frosting

if you haven't already had enough brown sugar a bit more is sprinkled on top
then speckled with pieces of pecan

knob creek was the bourbon of choice; thank goodness Danielle's husband is somewhat of a whiskey connoisseur - he led us straight to the knob creek

everyone should have a super hero in one form or another & everyone should try these cupcakes at least once in their lifetime - so make that one time today
or at least make them for the super hero in your life

Bourbon Brown Sugar Cupcakes
(adapted from vegan cupcakes take over the world)
makes 12

you will need:

for the cupcakes
1/2 cup soy yogurt
2/3 cup almond milk
1/4 applesauce
3 tbsp canola oil
1/4 cup bourbon
1 tbsp vanilla
3/4 cup packed brown sugar
1/4 tsp all spice
1 1/4 cups flour
2 tbsp cornstarch
3/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt

for the frosting
2 tbsp softened vegan butter
2 cups powdered sugar
3 tbsp almond milk
2 tbsp brown sugar

toppings
1/4 cup pecans
1 tbsp  brown sugar

assembly:
pre heat the oven to 350*
line a 12 cup muffin tin with liners

in a large bowl whisk together the yogurt, almond milk, applesauce, canola oil, bourbon, sugar & vanilla. sift in flour, cornstarch, baking powder, baking soda, all spice and salt. mix.

fill cupcake liners 3/4 of the way full. bake 22-24 minutes or until a tooth pick comes out clean when tested in the center of the cupcake. transfer to a wire cooling rack and cool completely prior to frosting

to make the frosting
in the bowl of a mixer beat butter and powdered sugar for about 30 seconds
on low/medium speed beat in almond milk until the frosting comes together
stir in brown sugar

frost fully cooled cupcakes and top with brown sugar & pecans

  1. I can't say that I'm a big bourbon drinker, but bourbon in cupcake form sounds pretty darn good! I love Vegan Cupcakes Take Over the World - the skinny vanilla cupcake recipe is incredible!

    1. Funny thing is I am not a Bourbon Drinekr either but LOVE experimenting with different liquors while baking and cooking; brown sugar and bourbon seemed perfect for each other :)

      Aren't their cookbooks the greatest!

  3. I agree - I don't think I've ever tried drinking bourbon but I'm intrigued by the idea of a bourbon cupcake! And it sounds just manly enough for a superhero dad :)

    1. I always picture southern men drinking bourbon on a big plantian on a front whit porch with pillars and all, the vision I have in actual of the KFC Dude, weird; i would much rather take my bourbon in the form of a cupcake any day!

    1. I really don't have a favorite cupcake either :)

      I could pick a a least favorite which would be plain chocolate; I a more of a vanilla girl especially if it contains booze, boozy cupcakes are the best!

    1. LOL back in my younger years (look I am making myself sound like i am 50) you use to rarely find me without a grey goose martini in my hand...now for some reason I am definitely not a a huge drinker but do love me some boozy cakes and cupcakes!

  7. dads are the best 4 sure.. my dad visited for like 20 days last year and fixed 5 things in the house and made me some boards and a small temple from scratch.. he just cannot rest even on vacation apparently!
    i know who is oggling at that bourbon bottle.. hubbs who is sneaking peeks at my screen!. i love just the cupcakes.. i neve like the frosting.. so i am going to put all the pecans in mine and some whole lotta bourbon in hubbs's!:D

  8. Awe, you are so sweet for making these for your helpful dad :) The cupcakes look truly delicious! I'm not sure I've ever had bourbon. But, I also like experimenting with different liqueurs when baking. So, I bet I'd love these. Congrats on your nomination!!!! ^_^

    1. He is so funny everytime I make him something he asks "was it vegan?" like he is surprised at the fact it is....I can never figure out if he is trying to be funny; caus'e the anwser is "of course its vegan!" I think he tries to get me all fired up :)

  10. What a sweet way to say 'thank you'! I love making cupcakes (and am planning to make some very soon, in fact) but most of the time I start thinking about all the different kinds I love, and would love to make, and then I get overwhelmed and can't choose. I think some day I'll have to make a list of my top 20 cupcake flavors and just make a different one each week. These would certainly make the list! :D

    1. LOL yes brown butter does make life better and it crossed my mind a few times as to how vegan "butter" would brown; I have a feeling it would not have the same effect as true brown butter :)
