sweet potato, black bean & bulgar soup

did everyone enjoy the holidays as much as i did?
sugar
sweets
cocktails
more sugar
that pretty much sums up what the past 2 months has looked like - good times, good times
but the reality is that i still need to fit into my pants. eating cake & sweets three times a day my friends does not help me in this area

to start of the new year right i would like to share with you a feel good soup
a soup that just might help you fit back into your "skinny jeans"

then in a few days i plan on sabotaging you all with an irresistible cake

no i am not evil - but at least you can eat this soup, then eat that piece of cake
 without feeling as guilty

it's all about balance isn't it - one of my life list goals for 2012
finding balance

and this soup does just that - for me anyways
and i hope it will for you too

just like it says- simple, wholesome, good
black beans - to fill you up
sweet potatoes - they just taste good, among many other things
garlic - so, so healthy
shallots - because we all need a little shallot in our lives
bulgar - what can i say, whole grain & high fiber
tomato - lycopene

...yep, it says barley in the photo but i totally meant bulgar

sweet potato, black bean & bulgar soup
6 servings

you will need:
  • 1 tsp olive oil
  • 1 large shallot/ 2 small - sliced
  • 2 cloves of garlic - minced
  • 2 medium sweet potatoes - peeled & cubed
  • 1 tbsp cumin
  • 1/2 cup bulgar
  • 1 can black beans, drained or 2 1/4 cups
  • 12oz tomato puree
  • 1 1/2 - 2 cups  cups water
  • 1 avocado - sliced
  • parsley for garnish (optional)
  • salt to taste
assembly:
  • heat a medium soup pot over medium heat - drizzle with olive oil & saute shallot until translucent
  • add sweet potatoes, garlic & cumin - stir until cumin has evenly coated potatoes
  • add black beans, bulgar, tomato puree & 1 cup of water - bring to a boil
  • reduce heat to low/simmer - simmer for approximately 30 minutes until sweet potato & bulgar are cooked through- adding more water as necessary (bulgar soaks up a lot of water, your soup may end up more stew like, simply add more water until desired consistency is reached)
  • serve with avocado & parsley

  2. wow, what a beautiful, inspired soup. i love everything about this soup- sweet potatoes, shallots, black beans(but minus the bulgar). i also love that you top it with avocado! here's to a health-filled new year!

  4. Yeah, I'm pretty much having to suck it in and say a prayer just to get my jeans on, myself! It was worth it though :) Not really, actually...

    I think your bossiness has just inspired me to make my own sauce! Do you have a post already on it? I wanna learn from the best :)

    @ Cara - 25 pounds of tomatoes, a scalded counter top and hot water down the leg later the camera never made it out while I was canning! If you want i can e-mail you my method :-)
