carob cashew bites

sweet but not overly sweet

chewy, almost fudgy

healthified fudge.....have i ever mentioned i really *dislike* that word healthified-  i do , i really, really do but for the life of me i cannot think of another word

goodified...nah that doesn't sound right

we'll stick with healthified for now

 carob chips, cashews, dates are the base for these energy squares- they could almost pass as fudge if you are not digging the carob feel free to substitute with semi-sweet or dark chocolate 

processed with a bit of agave they start to stick to together like best buds or...........

 sweaty thighs on vinyl car seats

molded into a square or rectangle under a bit of waxed paper- makes clean up and cutting easy

we like easy - don't you

then they are cut into bars.....do these look a little like, you know what?

lastly they are destined to be little squares

sprinkled with salt

carob cashew bites

makes approximately 16-18 bites/squares

you will need:

• 1/2 cup carob chips
• 1 cup pitted medjool dates
• 2 tbsp salted cashews
• 1 tbsp agave
• pinch sea or kosher salt

assembly:

• place carob chips in food processor or mini prep processor, process until pebble size crumbs form
• add dates and process until the mixture starts to combine
• add agave and cashews- process until a ball forms and mixtures pulls away from the side ( you may need to continue to stir the cashews if they were not all incorporated into the mixture)
• line a small (i used 4x6)baking dish with wax paper
• transfer mixture to the dish and spread evenly at about a 1 inch thickness
• remove from dish and cut into logs, then into squares
• sprinkle with sea salt
